If you are looking for a mayo-like recipe that is Whole 30, Paleo, Vegan, or Autoimmune Paleo (AIP) friendly–this one takes the cake! I found this recipe over at Primordial Table. It’s tangy and satisfying just the way mayo is and it pairs perfectly with Tuna Salad!
And who doesn’t love avocados? Okay, I know there are a few of you out there…but thank goodness for you, because there are more avocados for me!
I cut the original recipe in half because it makes the perfect single portion. However, if you are making a different type of salad with it (like a faux-tato type salad for a group)…you may want to double the recipe just in case :).
This makes around 3/4 cup and you can pop it in the fridge for a few days.
- 1 good and ripe avocado
- 1/8 cup of apple cider vinegar
- 1/8 cup of avocado oil (or Extra Virgin Olive Oil)
- 3/4 Tbsp Fresh Squeezed Lemon Juice
- 1/2 tsp salt
- Mix all ingredients in a blender or food processor until smooth. Enjoy!
